Overnight Sourdough Waffle Recipe

I loooooveee fancy breakfast.. and overnight sourdough waffles are one of our main go-tos on the weekend.

It’s also an excellent way to use up unfed sourdough starter discard, if I’ve had my starter out on the counter.

What’s your favourite breakfast? Are you on the sweet or savoury breakfast train (or, like me, do you love when it magically combines both)?

SOURDOUGH WAFFLE RECIPE

overnight sponge

2 cups flour

1 cup unfed sourdough starter

2 cups buttermilk

2 tbsp sugar (or honey or maple syrup)

Mix, loosely cover with a tea towel or beeswax wrap, and let rest at room temperature overnight.

In the morning:

2 large eggs

1/4 oil (melted butter, coconut, or veg)

3/4 tsp salt

1 tsp baking soda

2 tsp baking powder

1 tsp vanilla

In a small bowl, mix the eggs, oil, and vanilla, and then stir into the sponge. Add in the salt, baking soda, and baking powder and mix well.

Make waffles! (Or pancakes)
